Why do people get defensive or act so offended when I suggest it's possible to be racist against white people too?

Nobody wants to think of themselves as racist, it's as simple as that. Same reason why white people get offended when you imply they have latent racist tendencies, non-whites get offended when you suggest they might have subtle biases towards their own race and against others.

Racism is built out of the collective actions of people who think their opinions are just natural considering the circumstances. Not many really understand this yet, which is why people get offended when you suggest they could be contributing. I'm sure I contribute in some ways to racism that i haven't yet considered. Even though I look actively for these things, I still miss a lot.
